Vegan Comfort Soup


Lately I'm addicted to soup. It's such an easy (and affordable) meal that is great for a light dinner and even better for lunch the next day. The other night I was short on groceries and wanted to use up the items I had before they went bad - it ended up making a delicious soup and I've made it twice since! Plus it's guilt free!

1. Start by sautéing minced garlic in a pot with oil

2. Add vegetable broth and bring to a boil

3. Add any kind of rice or small pasta that you'd like

4. When the rice is almost done add the navy beans

5. Once the rice is fully cooked add the tomatoes and chopped spinach with 1 lemon

6. Let it simmer to thicken for 10+ minutes

7. EAT!
